After a winter of rain, sleet, and grey, the sun finally emerged this week. I felt like I too had emerged – from a cave! Time for some more outdoor time, some fresh flavours, and some bright colours. If you’re a fan of lemon tarts – or sour candies – this may be smoothie heaven. Tart, possibly even a bit puckery, but with a fresh taste that feels right on a cool, yet sunny spring day.
A hefty amount of calcium and protein-rich kefir plus no refined sugars make this smoothie a great post-workout or after-school snack.
The mango helps temper the tartness of the lemon, as well as helping with the creamy consistency. If you’d like it a tad sweeter, add another date. I’m using a Vitamix to make this smoothie – if you don’t have a high-powered smoothie that will effectively mix up dates, you can add a tsp of maple syrup or honey to add a little sweetness.

Lemon Tart Smoothie
A refreshingly tart shot of spring.
Ingredients
- 1 lemon preferably organic
- 1 banana preferably frozen
- 1/2 cup frozen mango
- 1 cup plain kefir
- 1/2 cup water
- 1 tbsp hemp seeds whole rolled oats make a great substitute
- 1/2 tsp pure vanilla
- 1 Medjool date can substitute other types of dates
Instructions

Peel and quarter the lemon. Remove seeds as best possible.

Add all ingredients into a blender, preferably a high-powered blender.

Blend to desired consistency.
