Avocado and chocolate might sound strange, but keep an open mind – the avocado combined with the coconut milk brings a delicious creamy texture to these chocolate treats. And even though you can’t taste the avocado, it still counts as at least a part serving of vegetable… not bad for a summer treat.
I first made these in my popsicle molds but discovered it was just a big too big for such a rich treat. I had a silicone ice cube tray that makes extra large cubes hanging around so gave that a try. The size was perfect. I didn’t have any popsicle sticks so cut some paper straws in half. Eat fast if you use straws…. sticks would be a better choice to prevent spills 🙂
It was hard to keep little hands out. This is a good thing.

Ice Cube Tray Avocado Fudgesicles
Cold summer treat with some bonus nutrients.
Ingredients
- 1/2 large ripe avocado or 1 small ripe avocado
- 1 1/2 cups coconut milk
- Pinch of sea salt
- 1 tsp vanilla
- 3 tbsp cocoa powder
- 1/4 cup honey
Instructions

Add all ingredients to a blender. Blend until smooth.

Scrape everything (it will be pretty thick) into your ice cube tray or popsicle molds.

Add popsicles sticks and carefully place in freezer.

Freeze at least 6 hours before enjoying.
