Chocolate Energy Bites

At the moment these are my favourite portable snack – easy to make, packed with protein and healthy fats, and delicious! I keep them in the freezer and when I am on the run, I pop 2-3 in my bag for later.

I started making regularly over the winter but this summer they have become a staple at most of our hikes and outdoor adventures.

I knew I had to post this recipe when a few friends asked me for the recipe the same week!

Chocolate Energy Bites

Excellent no bake snack packed with protein and healthy fats

Ingredients

  • 1 cup/150 grams of raw almonds
  • 1 cup/200 grams of pitted dates
  • 2.5 Tbsp of coconut oil
  • 2 Tbsp of almond butter
  • 4 Tbsp of cacao or cocoa powder
  • 1-Tbsp of cacao nibs (optional)
  • A pinch of salt
  • ½ cup/50 gr of shredded coconut for coating the balls

Instructions

  1. Place almonds in a food processor and pulse until finely crushed. Add the dates, coconut oil, almond butter, pinch of salt, cacao powder and cacao nibs (if using them) and pulse until all ingredients are fully mixed.

  2. Form 1 inch/2.5 cm balls. Roll each ball in shredded coconut and freeze for 15-20 minutes. Store in the fridge in an airtight container for 4-6 days or in the freezer for up to two months.
